So.....uuummm, Its been 6 weeks now and i decided to give the wine another shot. This may sound funny, but, it went from sour to actually pretty good. So, good, i went today and bought another one because it was on sale for $35. So, my question is, can i tweak this, to make it a little bit more sweet and a little bit more alcohol in it? Thanks
 
To sweeten it, you can try a couple of ways. Either pour a glass and add a little sugar, stir it in, or stabalize the whole batch and add simple sugar to taste. If you want more alcohol at the beginning of your ferment, add more sugar or honey to the must. Be forwarned if you get the alcohol too high it will tend to cover up the flavor of your wine. Don't know where your specific gravity starts, but I would bring it up to 1.080 to 1.090. Good luck with it, Arne.
 
I have so much to learn.....I thought i could add more grape juice in the beginning. I better get reading. I just want to make it a little bit of each ( sweeter and more alcohol) not much, before i bottle it.
