Do keep in mind that alot of this is subjective based on the experiences of individual winemakers. Those up north that regularly have low temperatures will have a lower tolerance for hot weather. Those of us down south that deal with higher temperatures regularly will have a higher tolerance.

southlake333 why do you suppose that is? I have only been making wine for about a year and am still "green"

Its just a matter of personal experience. If you always do things a certain way and end up with good results, you will be afraid that deviations will cause negative side effects. For those up north, heat is one of those deviations. For those of us down south, heat is the norm (within reason of course...not like I set my wine out back on a 100 degree day or anything...lol).
