The problem I see with jackkellers instructions is that he is teaching you to do everthing based on what day it is or if there is visual fermentation activity going on. The one basic thing I have seen repeated on this forum is that every step in wine making should be based on the Specific Gravity of the wine not what day it is or if you can see bubbles or foam in your primary or carboy. Jack Kellers site, as has been mentioned already, is full of worth while information but may be a bit dated. You can get better advise from this forum.
