I have not been making wine for very long and have just received my first kit. I have a six gallon kit of Island Mist Kiwi Pear Sauvignon Blanc. My question is the instructions say that I need an eight gallon container to start and I don"t have anything that big do I really need eight gallon? Can I use a six and one half gallon container?
Any help will be appreciated.

6 gallon should be just fine. I have made the Island Mist kits in my 6 gallon carboy with no problems.
 
If you're making it in a six gallon pail, sit the pail up where you'll never have to move it and you'll be able to easily siphon from it. It will be very full but the fermentation will not be very violent.
 
If the bucket is close to full, place it in another container of some kind. A tray, large dish pan, or even a plastic garbage bag. Sit the bucket in the bag and just pull up around the bottom. This is only to contain the mess if it overflows. Much easier to clean up. Been there, lol, Arne.
 
You can always split the fermenting wine into two separate containers, if the needs arises. Once fermentation is going, there is no problem splitting it up.
 
I guess I should have thought of that. I started it a couple of days ago and it is fermenting very good. I had about two inches left at the top and it seems to be doing OK. I am reluctant to move it at this time since it's so full.
