This is interesting.
"Japanese plum" can be refer to two different types of plants. Prunus salicina is the recipe Keller calls "Japanese Plums" and which calls for the almond. Eriobotrya japonica is a completely different recipe on Keller's site and has no almonds. Yet the loquat definitely has the amaretto smell to it, no doubt in my mind.
Not sure how I missed that earlier.
I will still try a bit of almond extract.
