I just got done degassing my wine. Wow, what a pain in the butt. I racked my white wine three times and the wine has been in the carboy for 5 months. Every time I used a drill with a whip for degassing and used it for 3-5 mins each racking. I then put the hand pump Mighty Vac and got the pressure to 24 that held steady for two hours with no bubbles. I thought the wine was degassed now. I was going to bottle the wine yesterday, so I tasted it before I got started. The wine had the CO2 taste so I know it was not degassed yet(Yes, I can taste the c02 in wine). I put the Mighty Vac back on and got it to 27 with no bubbles again. I then got the whip and drill back in and whipped the hell out of it for 5 mins. It was putting off alot of small c02 bubbles. I then put the might vac on to 26 with no bubbles. Tasted again and still had the C02 taste. To make a long story short, I had to do this three more times before I got all the C02 out. The Mighty Vac did not pull any c02 out of the wine, unless the whip had the c02 going up. Has anyone else had this problem with the Mighty Vac?
 
What is the temperature of the wine? It will not degas well if the temp is below about 75F.
 
Something just doesn't sound right there. If the temps were above what PeterZ said, it sounds like it should have been degassed and you may have been tasting something else.
 
I agree with above statements about temp and if you still taste C02 and had the temp up during this process you are associating something else with this as thats way higher then just about anyone goes or your gauge is faulty. I dont think I was even able to ever get either my electric pump or my Mity vac up that high ever!
