MLF in crabapple

Not wanting to hijack Vitru's thread started one of my own. Deezil, you said the mlf started on its own. I have a couple of carboys that have already cleared, had some k-meta added to them but not stabalized. I started them last fall, but is it too late to try the mlf on one of them. Think if it takes some of the acid out that would be a good thing. Can't tell how much acid is in there for sure, have another new acid test kit coming. my old ones are really outdated. Anyway, just dump the mlf in and warm it up? Anything else I have to do? Think I had a cherry do a mlf on its own a few years ago, but not sure. Also, how do you tell for sure the mlf is done? This will all be new to me. Arne.
 
MLF is rather new to me as well, as this is my first one & random at that.

I know MLB doesnt tolerate SO2, so you'll have to let the level drop.. They have different SO2 tolerances, and alcohol tolerances, and i think temperature tolerances as well.. But i believe, from what i've read, that 75F is a good "starting point"..

Someone correct me if im wrong, im no expert at MLF

Chromatography test kits are available to test for MLF completeness, but i havent ordered one nor learned how to do it yet so if someone explains that here i think we'd both learn something
 
Looks like we both have about the same amount of experience. We will see what the others have to say about it, maybe give it a try. Worst comes to worst, bet there will be another bunch of crab apples this fall. Arne.
 
I have several dozen MLF pdf's i've downloaded from several sources, I just havent waded through the information yet... I'll start that though, and keep you posted; makes me wonder if there's a "how to" on performing a chromatography test.. If not, I might need to make one

I know MoreWine has a good section on MLB they have for sale, and they list a good majority of the parameters that the various strains can handle.. I've picked through that, trying to learn what i can by browsing.. These pdf's are a different story :)
 
Can't you do a ML chromatography? I've got a kit here if you want to send a 5ml sample and cover the cost of the paper/chems.
