Is it safe to taste the must? And generally when should I or should I not taste my wine during the whole process?

I would wait till after the secondary or before adding the yeast.

I taste mine at every single part of the process. Will admit at some parts it don't taste as good as others and sometime downright nasty but there is nothing unsafe at tasting at any time.
