Well... Just add another 1/4 tsp K-meta to the Merlot after going Steven Seagal on its ass. I'm hoping for the best.

Figured its ABV to be 12.34.

One question...
The fining seems to be collecting at the top of the carboy. I'm on day 3 of fining/clearing. Should I do something to get this to fall to the bottom? Will this get heavy enough to fall on its own?
 
It should gather up like this and once it has attracted enough it will fall. Its floculating right now.

I'm at the racking and clarification stage of the Merlot. Looks like the fining did its job well. She's just about crystal clear. I snuck a taste... I hope I'm not one of those people that can pick up the "kit taste" easily but I did taste something in the background. I'm hoping that fades with time. I'm wondering if its the OneStep. That no rinse might be BS.

KT is a sweetness up front. Search Kit taste on this forum and see the conversation I had with Appleman about this. I do tasteKT as well as some of the chemical stuff that puts me off the new wines. It is true that all of those off tastes get less noticeable with time. Our WE Stag's Leap Merlot, now 20 months old is a case in point. Very drinkable. Our recommendation is to wait at least18 months.
 
Okay, long time no post. Both the Red head and Blonde are in bottles.
They turned out great. Although very young, they have real potential.
Completely drinkable at this point... and sorta enjoyable

I think I'm gonna try juice now... there's a place here in Jersey...
Corrados's.. that has vacuum sealed refrigerated juice. Anybody have a
good source of how-to directions for straight juice?
 
Tepe and Joeswine might be able to help you. I think Wade has done straight juice before as well
