Process / equipment options question:
I have 6 gal batches of Amarone and Barolo through most of primary. I still need to MLF. They are in loose lid 7.9 gal fermenters and will need to be racked.
These Italian wines are expensive to top up, as I learned when I racked my Nebbiolo over to a 6 gal carboy. I'd like to reserve some of this by racking over to a 5 gallon. I assume I should do that after MLF.
Can I innoculate the full batch in the primary, wait a couple of days and rack it too a 5 and 1 gal container?
What's the best option for reserving? Store in the same climate as the 5 gallon?
