My yet unfortified raisin sherry is bulk ageing and I will be racking/
filtering very soon and then fortifing to 20-22%. I have noticed that
many sherry kits are heavy oaked. How many of you think I should oak my
sherry? How much oak do you suggest? Which type of oak? How long???
Input would be greatly appreciated! I've never oaked except with kits
before.

Thanks,

Pete

HHHMMMMMM, I probably put this in the wrong area. Should have been in
the oak question posting area, but I would really love some advice on
this one.

From my perspective paulbin oaking is a matter of preference but for a Sherry I would think a French Oak Heavy Toast would get the job done well. 2-3 ozs for 6 gallon would be enough and I would check it after about 4 weeks and then weekly thereafter until it reaches the intensity you want.

So with a 1 gal. batch that would be 1/2 oz. OK, looks like I,ll have to order a little bit of oak.

Thanks Waldo,

Pete
