My wife is going through an orange eating phase. It’s some sort of fad diet or vitamin thing but didn’t want to ask, BUT… I’m looking at the orange peels thinking “what kind of fermentation can I add those peels to”. Waste not, want not and all that...

Never having used orange peel in anything I’m looking for suggestions.

Do you like orange marmalade? Easy to make with oranges, sugar and water. Or how about Orange infused Vodka? At least I would freeze some of the peels for orange zest which I use in pork dishes.
 
I’m wondering if you can use the peel sans white pithy part to make an orange skeeter pee?
The easiest way to do that is to use a zester, grater, or peeler to remove the zest before she peels the oranges. You can save the zest in the freezer until you are ready to use it. Avoid the white part of the peels, because they add a lot of bitterness.

Marmalade is also an excellent suggestion!
