My Apple wine from Oct. 09 never cleared, finally 2 weeks ago I gave it some pectic enzyme [8 drops per gal.] it's now cleared with a cloudy-very "soft" sediment on the bottom of the carboy. Know it's racking time. Question is how long is normal for the enzyme to work & will I need to do a 2nd rack in a few weeks or just wait a month or so & do 1 rack. Tks, Roy

It won't hurt to leave it in for a month until you plan to rack again.

I would suggest 4 to 6 weeks then rack. If you need to move the carboy to rack that you do so a few days or at least the day before as you'll probably kick up some moving it.
