I see, well those things seems hard to come by here in Stockholm. What would be the dissavandge of the sodium bicarb? I could get some wine chalk...
 
Your wine could end up tasting salty for one. Two - we don't need more sodium in our diets. And 3, the potassium treatment allows the precipitation of potassium bitartrate when you cold stabilize.

Those others seems to be hard to find where i live.
Sorry for spamming but what about Calcium carbonate?
