I made my double batch of LaBodega 4 years ago. Made it by the book. Fermented to dry, fortified to 19% with Brandy, used the ENTIRE supplied F-Pack and the finished wine ended up at ……….. 1.030!


When I made Port out of 6 gallons of Petit Syrah I followed the same plan only used Alexander's Zinfandel Concentrate as my F-Pack and back sweetened to …….. 1.03. Perfect sweetness. I think that is the magic number.
