I have 11 gallons of old vine zin aging in a Hungarian oak barrel. I made the wine right from grapes and it tasted very jammy prior to putting in the barrel. I think it was too fruity/jammy for my taste and am hoping the oak changes some of the flavor.

Is there anything I can blend it with to give it more of a spicy flavor?

Great...thank you all for the help.

The wine has been in the barrel for 3 weeks now. I tasted it last night and it already tastes better.

This is a 2nd time use barrel. The first use was for 8 weeks. I was going to see if I can get the zin in there for 16 weeks this time

Rule of thumb for a new barrel is about 1 week per gallon, but this is just a rule of thumb and is a matter of taste.

I normally add 50% more time during second use, so you may want to check it after 12 weeks and make the call then.
