Just bottled another liter while I wait for my fancy bottles to arrive. Is it just me or does the "burn" of the higher alcohol fade after a while?

It's been about 6 months bulk aging this, and seems that almost all the burning feeling of the alcohol has mellowed out, it's getting better all the time.
 
At two years, all it is a warmth in your chest... No burn at all
And the more subtle notes start to realllly come out, i just cracked the airlock on mine last night to give it a smell - even better than last time..
 
Yeah after brewing beer for a few years I was amazed how much this wine changed with 6 months of aging. Please post when you bottle yours and get the bottles lookin all fancy. I'll be making a double batch next time (hopefully soon).
 
Just bottled this up last night. Added the shrink caps and labels today.

Kinda wish I hadn't been sampling, only got 22 375ml bottles from the original 12liter batch. Next time it'll be a double batch!

I have a question - RJS produces 2 white "ice" wines. The Riesling and a Vidal, the Vidal is $10.00 more - anyone ever try both and if some what is "better" - I know that is very subjective.

Dean, I was wondering the same exact thing. I think the Rjs Vidal kit is highly rated as well but I was hoping for folks here to chime in.

Can't give you an answer from a comparison perspective Josh. I've only made the RJS Vidal ice wine (it's actually an ice wine "style") but I can tell you it turned out fabulous in my opinion. Just have to be prepared for a pretty sweet wine. Not something you would just be drinking casually for the sake of having a glass of wine. Best to drink with certain food pairings (I like ours with fresh pears and asiago cheese).
