My Cabernet has been in a Carboy for secondary fermentation for about 10 days now. The sg has been at 1.000 for the last 5 days or so. Is the fermentation done? My kit says it should be .998 or lower, but I'm thinking mine won't get down to that. The starting sg was 1.084.
Also, I'm concerned my hydrometer readings aren't accurate. The hydrometer I have says it's calibrated at 60F but the next temp it gives is 70F, for which you would add 1 (so 60 would be 1.000 and 70 would be 1.001...do I understand correctly?) What do I do if my temp is somewhere in between? Maybe I'm just being too paranoid and don't need to get that exact of a reading, but I'm just curious about how to read it.
Thanks!
