I have 8 gallons of apple wine that I will rack again in the next few days and I plan to experiment with cinnamon, allspice and cloves. I want just a hint of the spices so I'm not sure how much is not too much. I plan 2 or 3, 1-gallon carboys for this purpose. Anyone can give some amounts I should start with, please?

I add 3-4 cinnamon sticks to a 6 gallon carboy here.
