My strawberry breeze is clearing now. It's beautiful, the only thing wrong with it is that it has no taste or alcohol. It's the one I made from "Cocktail", I had to add a lot of water to it to get the SpGr down, but it fermitted down to 1.000, but still can't taste any alcohol. I think I'll just stick with fruits and 100% juices.

Another note: My beet wine is doing great, I transferred it to a carboy tonite at 1.000. Still have a steady stream of bubbles and have had to change/clean the air lock two times. Still a lot of activity, but not getting into the air lock now. The smell of it reminds me of my horse radish wine, but not as bad??

by the sounds of it you did not use enough cans of strawberry breeze and you added a lot of sugar. what is your recipe?
 
It's long, but here are my notes: 5/25/11
Strawberry Breeze (Cocktail)
Flavored Fruit Juice Cocktail A5
(I think the A5 must mean that there is only 5% fruit juice)
Strawberry Breeze Concentrate = 7 Cans = 80.5 ozs
7 Cans of water ------------------------= 80.5 ozs
1 jar Smuckers strawberry jam-----------= 32.0 ozs

pH = 2.8
added one crushed campden tablet
pH = 3.0
5/26/11
added 1/2 tsp bentonite
added 1 tsp yeast nutrient
added 1/2 tsp pectic enzyme
SpGr =1.040
added 1/4 tso yeast enigizer
***Read hydrometer wrong, it was 1.140
Added 1/2 cup sugar---SpGr = 1.045 ??? Still reading it wrong???
Added 1 cup of sugar---SpGr = 1.160---I think I finally got it right now
Made up another batch so I can add them together to bring the SpGr down
8 cans of strawberry breeze
8 cans of water
3 jars of smuckers "simply fruit-seedless strawberry spreadable fruit = 10 ozs
pH = 3.0
added 1/2 tsp bentonite
added 1/2 tsp yeast nutrient
1/4 tsp yeast enigizer
SpGr = 1.140
added water in 1/2 quarts each until I got the SpGr to 1.085==8 quarts
Mixed one pack of red star premier cuvee yeast in 1 cup of warm water and
added 1 tsp of sugar ==5 minutes later it was working = added to must
Ended up with approx 5 gallons of must
Controlled temp at 75*
5/28: SpGr = 1.070
5/29: SpGr = 1.056
5/30: SpGr = 1.032
5/31: SpGr = 1.012
Transferred to 5 gallon carboy, had to add 3 quarts of water ( should have
poured a quart out and used a 4 gallon carboy
6/3: SpGr = 1.001
6/6: SpGr = 1.000
6/10: SpGr = 1.000

Added 5/8 tsp K-Meta
Added 2 1/2 tsp Sorbate
Degassed with vacuum pump
Topped off with 1 quart of water (another mistake)
6/11: Back Sweetened to 1.020 --------5 cups of sugar
6/14: 2 PM added packet D1 (Kieselsol) of Super-Kleer
3 Pm added packet D2 (dissolved in 1 oz warm water)

Re-installed air lock

Problem: has no alcohol taste and only taste like a little "bitter" water
a very faint taste of Strawberry, if I didn't know what it was
I'm not sure I would be tasting the strawberry.

*It is clear and a faint redish color

Any suggestions?

I'd say way to much water. You put in about 2 gallon of water to a 5 gallon carboy. Not sure what you can do at this point since you have backsweeten it. You could try and get a couple pounds of strawberries and juice those and add them in. This should give you some more strawberry taste without a whole lot more of sugar. Or if you can fine a strawberry extract you could add that.

I think the alcohol taste would probably come through once you get the flavor up.
 
Id get some more of the strawberry spread/jam like 3 jars and put them into a sauce pan on low heat and cook it down to half of its volume let it cool and then add that to your wine. Thats about the only thing that might give it a flavor boost. Or your could look for some Strawberry syrup and add that.
 
If that wine is stabilized can you sit it on some frozen strawberries to absorb some of the flavors? Just a Idea
