I have several carboys that have been bulk aging. I am getting ready to start bottling some of them. My question is, should I check sulfite levels before I bottle. If yes and I have to make adjustments, how long should I wait after making adjustments to bottle.

I would say that it all depends...

If your wine is perfectly clear, and you do not have even a hint of sediment at the bottom of you carboy, then I would say adjust the SO2, give the wine a stir, wait an hour or two, then bottle.

If your wine has sediment at the bottom, or you feel stirring the wine is not prudent, then I agree with TonyP (wait a couple of days).
