How does one differentiate between the taste of young wine and wine that has too much acidity? I know that you can test for acidity but how would it taste differently?

I know the difference, but it's hard for me to explain. The too acidic taste to me reminds me of the first taste of some of the sour patch candy or kind of like the twang of a sweet tart.

Yeah, very hard to describe. I would describe a young wine taste as being similar to the way active fermentation smells. That is assuming you translate smells and tastes the way I do. :)
