16 ozs. Of blackberries will enhance the flavor and texture. Oak tannins and a small amount of chips , don’t over power the grapes .
That should be it , yeast of your choice , the ec1118 is a work horse and will do nicely .

Thanks @joeswine . I see where you've used dried cherries before (I think it was you). Would they be an option also or do they not work as well as blackberries?

By weight, I used 10 oz of a blend of cherries, blueberries and raisins in a 6 gal sangiovese kit. I would not go with 16oz. Having used them, they definitely add a fruit forward taste to a red wine. Unless u want a strong flavor, I would be careful with how much you use. I would probably use a little less next time. They definitely add flavor. I think 16 oz of cherries might be excessive.

Today I just started my Blueberry concentrate juice , my way.
I added 2 pints of fresh blueberries , tannins, pectin enzyme, bentonite to the mix giving me roughly a 12% abv, will see how that works out .
My goal is to have a true blueberry flavor as I can as an offering this year in the Hammonton wine contest as well as my Cabernet which has come along nicely.
Adding the freash fruit to the juice should help out balance the flavor .
Like I stated this is my way .
I’m having fun being creative at the same time .🍷

Today the fun continued, racked my customers 2 wines a cab and pino Grigio.
Then I turned my attention to my contest Blueberry 🫐 wine and placed it in the settling carboy for two weeks and my Sauvignon Blanc ( I making champagne out of a portion of it ) the rest stock.
For my next trick a Concord /Shiraz ?
That’s right 16ozs. Of fresh Concord grapes blended into a Sharaz.( $65 kit )

Dang, Joe! How old are your airlocks? :oops: Are they stained or has the plastic just yellowed over time? 🤣
 
Like Joe I use One Step on hardware -- it removes organic material, including any type of film on the hardware.
I have a question. can you find out or tell me why my replies on tweaking cheap wine kits never change? I can't start a conversation with anyone in tech about it, if you can help thanks.
