I have a DB variant, 5 gals.lemon juice, blackberry juice and pomegranate juice. Started 8/20/2017. SG 1.079. Finished at 0.999 on 8/26/17. It has been thoroughly de-gassed. Racked 2X. It has been in the carboy under air lock for 16 months. What is next??? I have a Milwaukee 102 and an AIO w/filter system.
 
Read the first post of the link, it gives clear directions of the whole process. I'm a first time winemaker and made 2 batches and they came out exactly as described.
 
I have a three gallon batch waiting for back sweetening and bottling, took under two weeks.
