Made a batch of hard cider from pippin apples. Rinsed and pressed them, added about 7 apples cut up (not core or seeds) in a bag to the must, used AC-4 yeast. Started 1.058, finished 0.998 after 2.5 weeks. Racked to 1 gal carboys and treated with kmeta.

I'm not sure what's growing on top of the cider, it was not there when I racked about 2 weeks ago. Not sure if it's protein, or a scoby, or some type of mold.

Any thoughts? Want to make sure when i force carb and bottle this it doesn't turn to slime.

Aerobic micro organism. Is the pH above 3.5? What was the metabisulphite treatment or current SO2? ,,, Yes it could be Acetobacter scoby. Yes it could be a mold especially if the pH is high and 6% alcohol. No it is not likely to be protein.
