From left to right

1. Apple Cider - Just racked tonight, will be made sparkling.

2. Rasberry - Just racked tonight.

3. Strawberry/Rhubarb - Just racked tonight.

4. Citrus Melomel - Clearing up nicely, been in the carboy about 1 month.

5. Blackberry - Bulk aging since May.

6. Raisin Sherry - Bulk aging since May, I'll be fortifying this
weekend and then bulking a few more months before
bottling.



Next up will probably be some concord and a blueberry melomel.

Nothing in the Carboy right now. I do have a Pinot Noir, Blueberry Port, and a Apple Peach in the Primary...

Steve..what was your recipe for the Blueberry Port?
 
Here is what I developed for the Blueberry Port, don't know how great it will turn out. I pitched the yeast this morning.


Ingredients:
Blueberry's5.5 lbs Bannana's 3 - 1 w/ peel
Waterto 2 gal Campden 2
Yeast Energizer1 tsp Yeast Nutrient 2 tsp
Bentonite1/8 tsp Sugar 6.5 lbs
Acid Blend3 tsp Pectic Enzyme 1 tsp
Red Start Flor Sherry Yeast


SG 1.122


I think I am going to oak it and then try to fortify it to between 18 and 20% ABV.Edited by: Steve

1.5 L Concord Port


1 Gal Cherry Melomel


1.5 Gal Plain Mead


1 Gal Joe M. Ancient Orange


1 Gal Niagara


1.5 Gal Blackberry Port


1 Gal Cinnamon Peach


Going tomorrow to pick fresh Black Raspberries, so should be starting a few gallons soon.
 
Hey are we in competition to see how many carbouys we can have
going.. Well i bet not. But I do see some compulstions
goling on with me. I am making less 5 gal batches and moving to 6 gals.
Due to the kits I get. I do keep a couple 5 gals going the non
kit way but take about 4 months to clear using just time and
gravity.
 
I have a Domaine Des Brumes, a white burgundy and a Mezza Luna Red. I have a Crushendo kit on standby and also a sherry kit.

On the left are "dregs" bottled and airlocked for settling and topping up. Then Nebbiolo, my problem-child lilac in the middle, and the "buttery" chardonay on the right. On the floor is rhubarb-grape and a CC Washington State Merlot (grape pack). Pinot and bourgeron rouge bottled and in the state-of-the art wine cellar... (as if...)

By the way, we're blowing through Gillette next Monday on our way to a quick trip to Illinois to visit grandparents -- I'll think of you as I gas up at that cheapy place on the east end of town!

HAD 15 LB. BLUEBERRY FOR ABOUT A YEAR. TIME THEY WENT TO WORK
I PUT 5 GAL. WHITE GRAPE JUICE, AND 5 CANS OF FROZENCONCENTRAT
AND 2 BANANA . IT DID NOT BLOW UP GUESS IT ALL RIGHT.
