My wine has finished fermenting (with the help of fermentation stopper) and has been on the shelf in a demijohn with airlock bubbler and bung for a month now clearing. Do I have to seal it with an airlock bubbler and bung or can I seal it with a solid rubber bung while it clears in the demijohn before bottling?

Always use an airlock, because wine can change even a year or two into the process.

I find it hard to keep a solid bung in place because of the changing pressure so I use a bubbler. However I do believe a solid bung would be fine if you can secure it, after all the "real" wineries use solid bungs.
