    If your SG is .997 - you might have some fermentation going on - but it won't be much and won't last long - because at that SG I would say it is done. I would bet you are seeing CO2 releasing through the airlock...

    Welcome aboard!!! I don't attach my airlock until i rack to my secondary. I just cover my primary with a cloth and let her ferment - stirring twice a day until my SG gets down to 1.005ish then i rack..

    6 gallons - well actually it is 7 gallons - I end up with 6 1/2 full gallons..

    3 cinnamon sticks, 1vanilla bean chopped up, and 1tsp for other spices except cloves. Cloves do 1/8 tsp, it goes a long way. I leave it in for about 3-5 says and do a taste/smell if it needs longer let it go longer. I would check a out every 3-5 days though

    I would use cinnamon sticks and a vanilla bean. I would also suggest putting these in a tea bag and dropping in. Easier to pull out and to clear

    Yeah they make them - I got my several years ago. I think it was from winemakersdepot.com but can't remember. They are are few bucks more but well worth it...
