    Why leave any steams in at all?Only acid you want to add is tartaric acid and nothing else.

    Great info MS,I add Fermaid K after lag and have used Fermaid O at 15 brix as well.But this is just my choice as I do not go by YAN numbers.I also use Fermaid K at 15 brix without the Fermaid O with great results.May be this year I will give the hulls a try with KGIII grapes if I am lucky enough...

    Yes,also remember to add your tannin 12 to 24 hrs after adding your enzyme.

    I have used syrah yeast with zin and petite syrah and liked it allot.Aging in oak barrels will give you the coffee,and spice flavors your looking for as well.

    I would wait press grapes at 1.000 or less.Wait 24 to 48 hrs rack off gross lees.Add your ml culture and nutrient.Keep warm around 70 or a bit above.Test in a month and keep testing until mlf is complete.Rack and add your s02.
