thanks for the help. I don't think the wine is in enough trouble to warrant
opening up the bottles. Just panicking because I've never done this before.
Is it possible to add tannin or something to change the characteristics of the
less expensive kits to give them the body that's not there (or at least yet)?
I've been reading the fruit wine forum and they don't seem to be bashful
about adding enzymes or oak and a variety of other things.
