you need to press the fruit to get the seeds out. Bladder press or panty hose or nylon mesh will work 6 days into an active ferment. If you have dried elderberries e.g. 1/2 lb to 1 lb add them ASAP.I decided to go with a PH of 3.3 but I have another question.
I found another 2kg of fruit so threw that in as well (freezer now empty) so the below is all the fruit plus 4 ltr of apple juice. I will add water and sugar later.
I will take this to 27 ltr 6 imp Gallons but with the fruit taking so much space, do you think will I need to press the fruit to fill a carboy?
I can hire one, or look on ebay for a £15 offer again

years ago i used a paint stirrer with a drill, had both a gallon one and a 5 gallon one, finally, I found a stainless stirrer from kraft mayonnaise,I'm punching down and stirring/mixing it all together by hand twice a day. I have a few days free now so I will increase the number of times I am doing it dependant on all the chores that I am given because "I have some free time" and "while you're doing that could you just .....".
When I initially put all the fruit in and it had defrosted I used a potato masher to mash as best as I could and most of it is a mush except for those f**%ing berries
To be honest the potato masher I have is a little small and part of my hand was submerged in fruit when I was doing it. It took me ages to lick my hand clean afterwards
I do get your point though and the only thing I could use is a degassing wand that is pretty robust so I will use that on a high speed each time I punchdown. I did just that a few minutes ago and most of the berries survived. Lets see if continued use does anything more.

Last week I started some blackberry wine as well. I let the berries thaw in a bucket (still in their freezer bags), and then dumped them into a pot in batches to mash and add to the primary fermenter.
