Sipping the sorbate is good. Your gravity will continue to fall since you didn't kill it with the sorbate. You should be fine.

I don't recommend "Sipping" the sorbate...

For me, and for some reason, this kit has not really come around after 2 years...

Is it the Celler Classic Winery one and not the En Preimur?

I have made this CCWS one 3 times and always the best wine I make that year. I made the EP once, it OK but nothing compared to the CCWS.
