Just a note Chitosan and Celstab DO USE THEM TOGETHER.

Maybe someone already knows this but..

I did a bench trial. I added Chitosan to help clear up a Liter of white wine, then added Celstab for tartrates and a
'snot' looking blob appeared.

Now in real life, I am a dry cleaner, and there are three different types of detergents.
Anionic (negatively charged), Cationic (positive charge), and non-ionic( no charge). If you mix Anionic and Cationic together, you get the same
"snot" looking blob that will mess up your system.

So just a heads up to adding Chitosan and Celstab together, DON" T

I didn't try Kieselsol. I didn't get that far in my bench trial.

 
@NCWC, I think your first line should read DON'T instead of DO?

Celstab (and most of the polymeric tartrate stabilizers) have a warning to not use them in wines which are not heat stable/have excess protein content. Chitosan isn't a protein of course, but it is poly-cationic (like proteins at wine pH), so might be expected to have the same liability... But thanks for doing the experiment! Glad it was a bench trial and not a big snotty mess in your bulk wine...
