I’m with you. I keep a heat belt on the carboy to keep it around 75F. Inoculate with MLF at around SG of 1.020, and keep it under airlock for 1 month. Then rack and add Kmeta.

When you inoculate with MLF, do you do this in conjunction with maceration?

With Grapes, I ferment then MLF for 6 weeks to 8 weeks and then add Sulfite. Interestingly, I'm now thinking of holding off adding Sulfite until after the two week clearing phase.

When you inoculate with MLF, do you do this in conjunction with maceration?

Yes. I add skin packs from Label Peelers to juice buckets I get from my LHBS. I leave the skin packs for the 1 month after SG gets low.

I racked my FWK Ultima Cab Sav today. I didn't intend to do an extra 2 week extended maceration but time got away from me!

It smells deliciously fruity and it tasted good but definitely needs time. The instructions say to let it sit for a couple weeks after this first racking because the varietal skins will have more coarse sediment to drop out than the normal skin packs. So I will let that drop and then rack it again in 2 to 4 weeks and add the oak at that racking.

I am not going to backsweeten so I will just dose it with kmeta and skip the stabilization packet that came with it. At this point I am planning to skip the clarifiers, too, since I plan to bulk age and let time do the clearing.
