I have a 420 plant vineyard (150 5yr old vines and 270 3yr vines). I want to in the next 5 years increase to 2.5 acres in production. If my maths correct, assuming I get 3.5 tons to the acre, I would be able to produce 550 cases of wine.
Currently I sell my wine grapes to a local winery, but once I hit this size, I think I could start a small commercial set up and rent a shop downtown as a tasting room. Do you think this is sound reasoning? I was thinking if this wasn't enough volume, I could use my vinifera grapes as a higher price point, and purchase hybrid bulk wine for sweeter value wines.
So assuming, 550 gallon production, starting from scratch, going from vine to wine, what are some reasonably affordable set-ups.
I'd like to use used neutral barrels for reds and stainless steel for whites. I'm open to plastic though too.
