To all you wise ones with wine on your breath and in your minds,

My first red wine kit (also :dmy second kit I've made) was bottled about 3 1/2 months ago. At one month I tasted a bottle, I found it to be harsh. At 3 months now I have put away another 4 bottles. The wine lost its harshness but I think it tasted somewhat thin. But outdoor parties require the proper inebriation so those bottles were sacrificed. On other postings I see describe how the wine improves with age, but what does that mean? Will my wine become the full red that I expect? Will I get more of that mouth feel? I do think it currently tastes like a thin Apothec Red but am hopeful?

I did get the valcano when it was in the primary. Could maybe that quick fermentation cause this thinness?:d
 
Assuming you're talking about the WE SELECTION ORIGINAL SERIES LUNA ROSSA, then I can't explain your thin wine. It should be a full bodied, rich, deep read wine even at 3 months old.
 
The body and structure of wine

Each pallet will have a different complexity , as to what his senses, medium or full-bodied just as each pallet has a different complexity of taste bitter, Sweet , Tart etc. but I do know that most body can be reconstructed but you first have to know the true characteristics of the wine you're making, not knowing the characteristics of the wine is also like knowing how it should finish out, was your wine a wine expert world vineyard kit? Or was it a wine expert selection kit with a great package ?if you can tell me that I can tell you how to build the body and the structure of the wine the next time you do one .yours respectfully JP


Always remember a thin bodied wine usually means there was not much to work with and this will apply to whites when the Reds .

I finished clearing and bottled my RJS WS Super Tuscan yesterday. I purchased this kit based on the "favorite red" postings on this website. At the end I had 1/2 a bottle left so that is my current sample of this wine. The tannins need to mellow some, but the rest is right on! What I really liked about this is the the long finish of flavor after a sip. There is just the right amount of astringency (I really enjoy that the most in a big red) then there is the feeling of warmth as I swallow that wine. This Super Tuscan was my next red wine kit after that Luna Rossa. I am really looking forward to trying a mature bottle. The kit says wait 3 months of aging is adequate.

The Luna Rossa was the WE Selection Original Lunna Rossa. I didn't know there were other versions and assumed simply saying WE was adequate. It did not have skins. This was my 2nd kit that I had ever made and was not sure I wanted to do a kit with skins. I will be more specific in future postings.

I purchased several kits online at 20% off and free shipping for a first time order. I bought several kits that interested me. A Barolo, Amerone and a Gerwerztraminer. All WE kits as that is what the location sells. I've never had a Barolo or Amerone but the descriptions and admirers on this forum have peaked my interest. I am starting the WE Selection Original Amerone with skins as my next kit now that my primary and secondary is empty. I will be following Joeswine posting on this kit with his posted tweaks. I will add raisins and oak to the secondary. This will be my first adventure into tweaking kits as my others have been strictly by the instructions.

I need to start hitting up the neighbors for more bottles!

What a great hobby. There seems to be a limited audience when telling someone a golf story but I'm amazed how most everyone wants to hear about making wine...

Good morning Bill, nice of you for following the threads -Amarone its a great wine to try in my case I've always been successful with adding the raisins and the oak TANNIN in the secondary remember making wine is like making a sauce we do IT in layers of flavors ,go back out and check the sangiovese flow or follow us with the Amarone and a GRAPES Skin package, this will guide you along the way,

This was my 2nd kit that I had ever made and was not sure I wanted to do a kit with skins. I will be more specific in future postings.


I had my first kit with skins, (WE Eclipse Napa Valley Stag's Leap). The skins were very easy to work with. Came in a bag, more like a jelly than dry. The included cheese cloth was the perfect delivery and exit method from my primary.

Overall, try it out. Addition of skins I hope to add more flavor and body to my, (now), racked wine.
