To all you wise ones with wine on your breath and in your minds,
My first red wine kit (also my second kit I've made) was bottled about 3 1/2 months ago. At one month I tasted a bottle, I found it to be harsh. At 3 months now I have put away another 4 bottles. The wine lost its harshness but I think it tasted somewhat thin. But outdoor parties require the proper inebriation so those bottles were sacrificed. On other postings I see describe how the wine improves with age, but what does that mean? Will my wine become the full red that I expect? Will I get more of that mouth feel? I do think it currently tastes like a thin Apothec Red but am hopeful?
I did get the valcano when it was in the primary. Could maybe that quick fermentation cause this thinness?
