Hi all,
I was wondering how would I go about making a chocolate port style wine.
I know this is crazy :?:?as the chocolate seems to be an issue. Joe gave me some ideas but I need to start from scratch, Raspberry wine fruit base. some good cocoa, I have thought of Penzys. 1/2 madagascar vanilla bean in the in the secondary and a maraschino cherries with the syrup in the secondary. Or should I consider modifying a coffee port as Joe has suggested.
I know this is kinda crazy , especially since I have a chocolate port on order.
I would also want to make a 3 gallon port.

suggestions, ideas would be appreciated.

You may be on something when you mentioned coffee. NOt a straight coffee but a mocha style, which could be considered a coffee and cocoa combination.

A raspberry base plus a lot of tweaks or

a mocha style with a lot of tweaks

some high volume gasoline such as a raspberry chamboard as a a flavor tweak.

Sal: any ideas for a raspberry base? I read the jack keller blog on chocolate. if I remember correctly, not too many were that enthused but one person detailed the chocolate issue in detail-now to find it
