I bought a bottle of 19 crimes red blend that is labeled as a sweet wine. My friends like it so I thought I’d investigate it. It has 7.7 g/l of acid, a PH of 3.41 and an sg of 1.003. It tastes sweeter than sg 1.003, I wonder what additive they use to make it sweeter, it’s not real sweet but you can tell it’s been sweetened. Maybe today I’ll do a bench trial with some of my wine and see how it tastes at 1.003. If my math is correct that’s about 7 grams per bottle.

wow. That is a lot more acid and lower pH than I expected from 19 Crimes. I must try to do some backsweetening experiments and forgo my wine purist ways. I am sure that the sweetener is not artifical, perhaps fructose, but probably just something like Mega Purple
