Ok, now what?

I have made4 kits, and I have (2)6.5 gallon primary fermenters and a 6 gallon glass car-boy. I want to make fruit wines from some fresh rasberries growing around here, but most recipes call for 1 gallon. can I use my larger fermenters and carboy for 1 gallon batches?

Ferment in almost anything thats food grade. Be careful on some of the net recipies. For raspberry wine start with at least 6#'s per gallon. Ck back here once you have them (freeze them) You will need extra chemicals (meta, sorbate,TA kit, nutrient, Pectic enzyme, clearing agent just to name a few).

I wouldn't do a one gallon batch in a 6.5 gallon carboy. Technically you could do the primary fermentation in that large of a container but you would have to watch it very close and transfer to a one gallon vessel at just the right time. You need to find a larger food grade container and just do a 5-6 gallon batch. Particularly if you want to do fruit wines as you need a vessel that will hold the fruit as well as liquid. I have a variety of primary fermenter food grade buckets ranging from 2 gallon to 12 gallon. Almost all of them were acquired free. Most came from a local doughnut shop.

Your local donut shop as well as restaurantsis a great place to pick up smaller fermenters.

Primaries are no problem as bigger vessels are good but for secondary you need to eliminate all the head space. Find yourself some 1 gallon glass jugs either new from this site or used from a recycling center or you could even buy a jug of Carlo Rossi or similiar and drink that wine and use the carboy. To make those fruit wines you will need more supplies like pectic enzyme and stuff. Below is the link to a 1 gallon carboy with bung and airlock.

Just multiply the ingredients by 6 except for the yeast.
