If you are only making wine from kits, you can trust the manufacturers will get the pH right, and you don't need to test. Just add the 1/4 tsp that the instructions suggest if you're aging longer than 6 months.Whats a good tester to get?

You don't mention kieselsol. Did you add that? I have never used chitosan on its own so I have no idea what happens if you do.
