When I was in the Okanagan this summer I picked up a couple of bottles of "Late Harvest Merlot". It's a really nice rich dessert wine, much like a red ice wine, but a little less syrupy. Could I make something like that from a kit? I am thinking of starting with the RJS Cru Specialty Cabernet Franc Ice Wine Style kit but I'm not sure what to do after that. Any ideas?
