So i made 2 - 3 gallon batchs of Skeeter one had added Oceanspray Cranberry/Elderberry The acidity is as low as can be i just used test strips and it shows about 2? or lower? the plain skeeter is great the added juice one doesnt taste good but I'm not sure what it is. what else should I test? or try to add in a glass to see if it helps?
I have been making wine off and on for 15 years but I am no expert. Usually the skeeter is easy and quick and gone fast. But I'm a bit stumped on this one.
I was naughty and didn't use the hydrometer before this time. I did notice they both seemed to stop so one I did add some yeast after a few days. I think it was the plain.
Tips or tricks welcome!
 
Acid taste depends on total acidity (TA) , ie how fast the acid molecules wash off the taste buds with saliva. In normal ranges sugar will balance acid flavors, therefore you should be able to balance the acidity with more sugar. Cranberry has some tannin which is a magnifier of acidic flavor on the taste buds. Again sugar is a normal fix.
Our second choice on cutting TA is to dilute it, for example using a simple syrup for sweetening.
