if the skins are sulfited, it will not kill that yeast. But won't it cause a setback in the vigor of the yeast (which is likely dormant due to lack of sugars to eat anyway)?


So the newly pitched yeast would have an opportunity to get established prior to the yeast in the skins.


Could be a tie though.

Yeah Steve, I mentioned in an earlier post that sulphite will not kill the yeast on the skins.

Scott, like Steve said, EC-1118 should win over the yeast on the skins, but you will slow them down a bit due to the fight that will start. You can overcome this by making a good starter. Short your hydration by 2 liters and make a 2L starter with water and grape concentrate. Go for a 1.050 SG on your starter and then pitch the EC-1118 2 days prior to building the kit. Keep your starter and the kit at the same temperature to not shock the yeast, and you'll be good to go!
 
Many Thanks. The pressed skins have just added so much body to these smaller kits. I just have 2 more small ones to do with the Shiraz skins, then back to my WE Limited editions
