if the skins are sulfited, it will not kill that yeast. But won't it cause a setback in the vigor of the yeast (which is likely dormant due to lack of sugars to eat anyway)?
So the newly pitched yeast would have an opportunity to get established prior to the yeast in the skins.
Could be a tie though.
