    Amarone is typically known for having higher abv, how much does this kit make? It looks like 12-14% but all of the Amarone I've had has been 16%. Can this kit handle 16% or will it overwhelm the flavors?

    Gruner veltner Brix 22.4 TA 0.59 Ph 3.38 Would you adjust anything? I'm thinking of using 71b-1122 for the yeast. Would you use D47?

    Buying a frozen chardonnay bucket this week. (5 gallons) How much k meta powder should I add when I get it? 1/8 teaspoon? Then wait 12 hours before pitching the yeast. How much powdered pectic enzyme? What yeast? I was thinking 71B-1122.

    I'm looking to enter my wine in a few contests this year. Are there some contests that tend to place wines higher? Yeah yeah I know a gold medal doesn't mean anything if they hand them out like candy but I'm looking for some encouragement.
