    Dan might be able to speak to this. But i think when they cold crash they do an absolute filtration afterwards to get the yeast out.

    Yeah play with GIMP - IMHO - it is the one of the best freeware imaging software - very comparable to photoshop...

    Gimp is probably your best bet. I like that for freeware. But it has the same look and feel as photoshop which i am knew how to use - so Gimp was not that hard for me to pick up. Install it and play around with it - there is also a lot of documentation online for Gimp..

    2011 Seyval Wine

    Yes I cold soak them as well - the Seyval is really coming into its own now - a lot of citrus aromas and flavors, it also has some minerality to it.. It is a tad sweeter than I wanted - but still in the semi-dry category. My next vintage I am going to make it drier. I would have won a bronze...

    Yeah i would also suggest splash racking 2-3 times if needed. Usually 1-2 times will do the trick - it just needs aerated out..

    Yeah fermentation appears to be going pretty good. When the fermentation has stopped - I would rack over to a new container and top up 1-2" from the bottom of the bung.
