Before I use the AIO, I like to degas with the drill mounted paddle, I do it multiple times and vigorously.
Recently finished a Sav Blanc Moscato blend and sitting in basement with temps in lower 60s, but no issue clearing at all.
 
Racked off the sediment, added sulfite and clearing agents last night. SG was at 0.994. Tasting and smelling quite nice so far.

How is this coming along?
Forgot to ask, this kit doesn't have an f-pack, does it?
If not, how is the flavor (I know it is young) in terms of too dry or not.

I like my whites a bit off dry.

After adding clarifiers and KMeta on 3/8, I let it sit for two weeks, then gently racked to a clean carboy and topped up with Viogner. I'll filter in the next week or two, then let it go another two weeks before a final racking and bottling. My only note on the last tasting was that it was 'good', but some of the viognier-esque aromatics that were very noticeable in the juice were gone. I'm hoping they return.

It is dry, but you could always backsweeten if that's not your thing.

Some of those whites are dry but the varietal flavor makes a perception of not completely dry.

For example, last year I made the WE LE Trio Blanca which came with no f-pack, it went down to 0.992 but it is very very good wine and I did not back sweeten at all.
I think that trio had some Muscat in it and maybe Chardonnay.
But again, although crazy dry, I like that wine very much and it smells really nice too.

I think Viognier is one of those varietals. Not only dry, it can be quite acidic. But the flavors and the nose can make you think otherwise.
 
This Carrusel really got me thinking, it is tempting but I just ordered 2 of the WE LE ...:(

Filtered this morning using the AIO.
First time using filter setup, used a P1 filter I was getting some air bubbles in the line not sure why. Will investigate, I recall reading about this on a thread here.
Anyway had a sample, I am impressed. Can't wait to start drinking!
Plan to bottle it early next month.

25 bottles this morning, plus another not quite full will have tonight.

Taste? How is it overall?

To be honest my tastes lean to reds mostly. I do, however, like Viognier not sure if it is coming through much right now. The half filled bottle is chilling in refrigerator once girlfriend is home from work we will compare notes. So stand by!

We drank the partial bottle on Sunday SWMBO loves it!
Find the Viognier to just come through, light crisp as a mostly red kinda guy I enjoyed drinking.
