I have this 16L Wine Kit in secondary now, transferred to carboy yesterday with SG ~1.010 as mentioned in the instructions.

During primary, I checked the PH and it was rather low, one time it measured around 2.57 and then 2.75 or so.

Have you seen such a low PH in a wine kit?
I understand that PH can come down in alcoholic fermentation but this low?
I will measure again once fermentation is done but am concerned about the taste of this wine...:ft

I have a white juice bucket in primary, Lodi Gold Muscat Canelli, and its PH was around the 3.7 when I started it Saturday.
 
all kits are adjusted by manufacturer. I would suggest go through the instructions wait until wine clears and then taste. The cheapest wine test tool is your tongue.
also wait until wine is degassed. white wines are normally acid to maintain there crisp taste. if it taste good regardless of ph go ahead.

You could try gently heating the sample to release co2. However, I do not think that the carboxylic acid is really playing that big of a role. Have you calibrated the PH meter recently?
 
I wouldn't worry at the moment. Let it finish out, degas, stabilize then retest pH and calibrate the meter with 4.01 std first.
 
You generally do not need to check the pH of a kit wine. I also wouldn't worry about the pH for a wine that is actively fermenting and still saturated with CO2.
 
The PH end up very low...sitting in carboy clearing and will check ph again.
