its really weird you said that i let it sit on bourbon soaked vinnilla beans for 2 month and the had it sit on oak for about 3 monthsAnother potentially good option to balance this out would be to fortify it - Given your sugar profile, bourbon could compliment it well; perhaps hit it with some vanilla beans, as well. could make for an interesting dessert mead
