Ok Joe, off to the races with the Fontana Shiraz.
Tweaks made to base kit of juice.
- Added 1 cup heavy toast chips
- Added 1 tsp tannin
- Switched yeast and went with Red Star Pasteur Red
- Made an fpac from 6 pz. blueberries and 6 oz. blackberries simmered down in 1/2 cup merlot. Once cooled, added to must.
SG 1.096

Started it Saturday morning, fermenting away nicely so far.

So far so good next time. Just add the fruit in right off the stove the heat will help not hurt.... keep us informed..

WOW! I am looking for the Shiraz kit right now. Where did you get yours wineforfun?

I want this kit to:
1. tweak
2. blend with the Malbec

That may not be an "offical" wine style....but it sounds good to me. We did a little bottle blending with these two and liked the results.

What do you think Joe? I mean you rocked boat with your tweaking. Imagine what would happen if we start blending these step children together!!:h

Ordered mine from Walmart.com. 38.95 w/free shipping. Amazon is same price but they were out.

It could Temp the wine's temperature to start fermentation if not no harm and you move through the process with out waiting.

I gotcha. I assumed that is what you were getting at but thought I would double check.

Cheap kits

I had a few sips of the latest Fontana malbec...3rd or 4th time with this kit...this may be the best one yet. But, I spent an extra 10 bucks on canned fruit...cherry, plums, and blackberries to so it better be good!
In secondary now for two weeks...tasted young still a little yeasty but there was some warmth and goodness in there too.

I saw Gerald's post on jalapeno red wine....I may do a gallon or so, dry hop the peppers like beer hops....in fact, I'm thinking of using just the seeds (in a small bag)...keep tweaking!

Enjoying tweaking cheap kits with the great ideas from this thread.
