You have the room!! I make it in the kitchen, xfer to the carboys, and store in the dining room. The problem is that the dining room is also my wife's office. I believe it was @joeswine that posted this tweak for Pinot Noir: "In primary add dried Plums or Italian Plums f-pac (adds earthiness)." Maybe he has more recent ideas for you. Stand by.

In 14 days the basic fermentation is almost complete, then transfer the batch from bucket to carboy ( you control the last of the Fermentation ), every night gentle rock the fermentation till it’s gone ( 10!days ) approximately.Think I’m going to use 16ozs of blackberry on one the Shiraz I think , the Merlot basic with added tannins in the secondary.

Actually I think I’ve done them all , really iv been around kits from their very conception with wine experts first started out.Have yet to try a Wild Grapes kit!
